Rice with Veggies in Cream Sauce

I MADE DELICIOUSNESS

Best idea yet: I cooked the rice in chicken broth instead of normal water. It was delicious all by itself!
Then I added vegetables in cream sauce and it is wonderful!

Scrambled Eggs

So, I need to get better at posting stuff. I probably wont, but why not capitalize on the motivation why it's still there? Plus, I don't want to work on my essays. XP This morning I got up and made scrambled eggs! Should I really post a recipe? Probably not, but I guess that I'll follow the example of my other posts:

Scrambled Eggs
BEAT two eggs
SHRED cheddar cheese into it
TEAR up some spinach
CUT 2 turkey lunchmeat slices into squares
MIX together
POUR into frying pan
STIR occasionally
ADD pepper
STIR some more
EAT

I was surprised at the deliciousness. And they provide another way to use the spinach! The lunchmeat provided plenty of salt.

UFO Festival

UFO Fest is held in Mcminnville, OR

The events cover Friday (13) and Saturday (14). Carol invited me to go with her, her mother, and her brother, but the family couldn't make it. I invited Jeff since we had the tickets. Our aim was to go Saturday and make a full day of it, but we didn't get there till 1:30. We're bad at waking up and getting moving. XP So, we get the tail-end of the parade and missed the first speaker. The second speaker was just an over-glorified name-dropper and was hella boring. I wanted to see the pet parade, but we missed it. :( Ah wells, next year we are going to try and go and be ready in the morning with costumes! It was hella fun even though we pretty much missed everything. Just randomly walking around watching all the people, seeing the crazy costumes, and exploring the town. UFO fest is put on by Mcmenamins and their hotel there was pretty grand. It had pretty pictures and a rooftop bar! Jeff bought Carol and I drinks. We also found this fancy-looking cafe-restaurant that served us some DELICIOUS drinks. I don't remember the name, but it was on 3rd street. *nod* There was this crazy old guy in this amazing yellow alien outfit, but Jeff missed getting a pic of him. We saw him later without his hood/head bit on, and he STILL looked crazy. All fluffy white hair and old. He was amazing! ^_^ 

Jeff took all of these pictures except for the one of himself and the lecture. For once, I wasn't in a picture-taking mood. I did do the touching-up and cropping, though! :)

A Columbia Beach

If you go straight through after taking the C&D Burger joint exit, then go right at the fork and then turn off to the left, you will reach a beach, Boardman, OR 

I was trying to figure a way to get Jeff to calm down and smile again, so I told him we should find a beach and take a walk. So we found a beach. And took a walk. The sun was setting and it was pretty warm. The beach was rocky (of course), but it was fun to jump from rock to rock. We passed the time with Jeff skipping stones and me finding him good ones (or just mutated flattish ones XD). Along the bank was this awesome tree that I had fun climbing in. The view was beautiful.

Black Bean Soup

So, the original plan was to use up my potatoes and celery and maybe use some type of broth and maybe turn it into an odd type of egg drop soup. But, then I found my beans. Looking up recipies, I found a soup that I thought I could make......funnily enough, I didn't realize till a bit through that I was missing a couple ingredients! But, that's alright. I like the lemon/salt flavor that came out. Apparently, black bean soups are typically spicy? I wouldn't have liked that anyways. Here it is!

Black Bean Soup
SIMMER together 2 minced garlic cloves, 2 finely chopped celery ribs, 2 chicken bouillon cubes, and 1.5 cups water for 10 minutes.
ADD 1/2 can of black beans and 1/2 tsp salt.
COOK for 5 minutes.
REMOVE from burner and use the bottom of a cup or something to SMASH, CRUSH, and otherwise SMOOSH the soup.
RETURN to burner.
ADD the rest of the can of beans and another whole can.
COMBINE 1.5 tbsp cornstarch with 1.5 tbsp water
ADD cornstarch mixture and 1.5 tbsp lemon juice to soup
COOK until thickens.

The recipe called for the soup to be pureed at the smooshing step, but I dunno how to do that. I wonder if that'd make a difference?
I think carrots would taste good in this--the lemon is a little strong, but might compliment well.
There are some ingredients I left out, an onion, cumin, pepper. They may improve it......but I like the non-spicy.
