Escaping to Work and Food

So, my boyfriend broke up with me (which sucks). However, I have been working on keeping busy and taking care of myself--mostly through focusing on feeding times and work.

Work has been fairly easy to keep embroiled in because this week....oh goodness, this week. At least three school tours every day. And to top it off, this weekend is a big event. There are lots of reenactors around, so that's fun. BUT the school kids had unexpected amounts of money and ate up ALL my stock! I was pretty stressed out about it at the beginning of my week (Wednesday), but at this point, there's really nothing I can do. So, I've sort of found my zen there. Perhaps too much zen though, I should be having a fancy sale or something for the event but....it's tomorrow. Too late now! xD More zen as I offer it up to the winds? I'm sure everyone else is more than enough stressed out for me.

This week, I decided to try out my new crockpot my lovely best friend got for me. ^_^ So, every night is a new meal! Unfortunately, I grabbed recipes that are 6 hours long instead of 8. But, I also needed to make sure I took lunch breaks this week to not go into overtime, so I just started them at 1 and eat around 7....or 10 as yesterday my lunch ended up happening rather late. Tonight's dinner could probably use a side, but turned out deliciously!

Spinach Soup

Ingredients:
          8 oz fresh spinach (or exactly 1 handful)
          1 cucumber, peeled and cut in large slices (or don't peel....>.>)
          1 tbsp olive oil
          1/4 cup minced onion (Walla Walla Sweets, yeah!)
          salt, pepper (oops, I forgot this one)
          2 garlic cloves
          1/2 cup cream
          1/4 cup chopped fresh basil (I used the tube "fresh" stuff)

Directions:
          1. Place 1/2 of the spinach in cooker.
          2. Add everything but cream and basil.
          3. Cook on low for 6 hours or 3 high.
          4. Blend. Add rest of spinach. Blend.
          5. Warm cream and add it in, if desired. Serve with basil.

How did it turn out? Delicious! Not as thick as I thought it would be, but way more flavorful. I'm not convinced of its heartiness, however, and will probably need to eat more. Therefore, I recommend a good side or two with it. I'm interested to see if it's as good chilled......
